Our Sémillon comes from unirrigated old vines that we pick at about 11-12% potential alcohol with enough natural acidity. A portion of the fruit is whole bunch pressed in a traditional wooden basket press. The wine is then fermented to dryness and left to go through full malolactic fermentation in order to keep it Preservative Free. Like all our wines it is estate-bottled, never fined or filtered. SO2-free. Try it with freshly picked strawberries!
