It was then taken to the winery, fermented in open fermenters with the cap pumped over 3 times daily to add colour, texture and body. The wine was then transferred to finely grained French Heinrich Cote du Rhone Barriques for nine months maturation. Deep garnet with a youthful purple hue. AROMA: Aromas of spice, white pepper and aniseed, combining beautifully with dark berries, black cherry and toasty oak aromas. There is some savoury meatiness adding further character. The palate is soft and approachable with subtle, elegant mouth coating tannins. It has a balanced structure with a solid backbone surrounded by dark berry and spice flavours. CELLARING: Medium term cellaring to around 2015 will ensure further integration and development of lovely maturation flavours.
